Patrón was founded in February 2014 by the group behind Botafumeiro, Barcelona's landmark seafood restaurant.

Patrón opened in February 2014 in Barcelona's Sarrià-Sant Gervasi district, part of the group led by Moncho Neira, owner of the city's landmark seafood restaurant Botafumeiro. Interior designer Lázaro Rosa-Violán built the 700 square metre space around a nautical theme, with seven private cabin-style rooms called camarotes for dinners that want a door.

The kitchen runs non-stop from 8am to 1am and centres on seafood: king crab, oysters, fresh fish and charcoal-grilled rice dishes, alongside grilled Galician meats and a sushi menu that mixes Japanese technique with Mediterranean ingredients. Live music plays every night from 9pm, building into a full Dinner Show with DJs on Fridays and Saturdays.
