Chambao's Lucifer tomahawk is flambéed at the table, and the Mamut double-rib arrives built for two.
Chambao sits on Paseo de la Castellana in Madrid's Salamanca district, a steakhouse and seafood restaurant styled on bohemian Tulum: rustic wood tables, hand-woven rattan lamps and an on-site clothing boutique. The kitchen runs certified Kobe beef, Creekstone Farms aged cuts and Australian Wagyu alongside fresh seafood, and a business lunch menu runs through the week.
The signature dishes are the Lucifer tomahawk, flambéed tableside, and the Mamut double-rib cut, both built for sharing, next to a 16-hour braised Short Rib. Evenings bring flamenco guitar, modern dance and a singer who moves between tables, and Chambao has run a limited tasting menu with Michelin-starred guest chef Rodrigo Rivera Río, built around six courses cooked over fire.
